Sweet bell peppers are filled with browned sausage, fluffy rice, garlic, onion and tomato sauce, topped with mozzarella and baked until the peppers are soft and the cheese is bubbling.

In this post I will explain how to pick the right peppers, what goes into the filling, how to assemble and bake them so they are tender but still hold their shape, plus tips, variations, serving ideas, common mistakes and make-ahead advice. Why These Italian Sausage Stuffed Peppers Work

Stuffed peppers can be bland or watery when they are rushed. This version solves both problems by building flavor in the filling before it ever goes into the pepper, and by giving the peppers a short head start in the oven.

  • Sausage seasons the whole dish. Italian sausage already has fennel, garlic and herbs, so you need very few extra ingredients.
  • Cooked rice keeps it fluffy. Using rice that is already cooked means the filling does not soak up all the liquid or turn gummy.
  • Pre-baking the peppers. A short bake before stuffing softens the peppers and keeps the dish from turning watery.
  • Tomato sauce on two levels. A little goes in the filling and a little goes in the dish, so every bite is juicy.
  • Cheese for the finish. Mozzarella melts over the top, and a sprinkle of Parmesan adds a salty edge.

The recipe is flexible and forgiving, and it is a great way to use leftover rice. It also freezes and reheats well, which makes it a smart choice for busy weeks.

Choosing the Right Bell Peppers

Look for large, firm bell peppers with flat bottoms so they stand up in the baking dish. Red, yellow and orange peppers are sweeter and softer when baked, while green peppers have a slightly bitter, grassy flavor that some people love. A mix of colors makes the dish look festive.

To prepare the peppers, slice off the tops and cut out the stems, then scoop out the seeds and white ribs. If a pepper will not stand up, slice a very thin piece off the bottom, taking care not to cut a hole. You can also halve the peppers lengthwise and fill them like little boats, which gives you more surface for the cheese.

Chop the pepper tops you cut off and stir them into the filling so nothing goes to waste.

Quick tip: Choose peppers that are about the same size so they bake evenly. Very large peppers may need 10 extra minutes.

Ingredients You Will Need

  • Bell peppers: Six large peppers in any color.
  • Italian sausage: One pound (450 g), mild or hot, removed from the casings.
  • Cooked rice: About 2 cups (370 g), white or brown.
  • Onion and garlic: They give the filling its savory backbone.
  • Tomato sauce: Jarred marinara or plain tomato sauce both work.
  • Italian seasoning: Plus salt, pepper and a pinch of red pepper flakes.
  • Mozzarella: Shredded, low-moisture, for a stretchy finish.
  • Parmesan: A little grated on top for extra flavor.
  • Fresh basil or parsley: For garnish.

If you cannot find loose Italian sausage, buy links and squeeze the meat out of the casings. Turkey Italian sausage also works, but add a tablespoon of olive oil when browning because it is leaner.

I prefer a chunky marinara with visible tomato pieces, because it adds texture to the filling. Check the label and choose one without a lot of added sugar.

How to Make Italian Sausage Stuffed Peppers

The whole dish takes about 70 minutes, but most of it is hands-off baking. Heat the oven first so it is ready when you finish the filling.

  1. Prep the peppers. Preheat the oven to 375°F (190°C). Cut off the tops, remove the seeds and ribs, and stand the peppers in a 9×13-inch (23×33 cm) baking dish.
  2. Give them a head start. Bake the empty peppers for 10 minutes. Carefully pour out any liquid that collects.
  3. Brown the sausage. Cook the sausage and chopped onion in a large skillet over medium-high heat, breaking up the meat, for 7 to 8 minutes until no pink remains. Drain excess fat.
  4. Season the filling. Add the garlic, Italian seasoning, chopped pepper tops and red pepper flakes and cook 1 minute. Stir in 1 cup of tomato sauce and the cooked rice, then add half the mozzarella.
  5. Stuff. Spoon the filling into the peppers, packing it lightly and mounding it on top. Pour the remaining sauce around the peppers.
  6. Bake covered. Cover with foil and bake 25 minutes until the peppers begin to soften.
  7. Add the cheese. Uncover, top with the remaining mozzarella and Parmesan and bake 10 to 15 minutes more until bubbly. The filling should reach 160°F (71°C).

Let the peppers rest for 5 minutes before serving so the filling sets and the cheese is not molten hot. Garnish with fresh basil.

Tips for the Best Stuffed Peppers

  • Use a dish that fits snugly. Peppers packed close together hold each other up.
  • Drain the sausage well. Extra fat makes the filling greasy and the sauce oily.
  • Do not overstuff. Pack the filling lightly so it heats through evenly.
  • Add a splash of water. Pour a few tablespoons of water or broth into the bottom of the dish to keep the peppers steaming rather than scorching.
  • Check with a thermometer. The filling should reach 160°F (71°C) because it contains ground pork.
  • Rest before slicing. A few minutes helps the filling hold together.

Easy Variations

  • Low carb: Replace the rice with cauliflower rice and cook it with the sausage for the last 3 minutes.
  • Cheesy pizza style: Add a handful of mini pepperoni and use pizza sauce.
  • Spicy: Use hot Italian sausage and a pinch of red pepper flakes.
  • Beef version: Use half ground beef and half sausage for a milder flavor.
  • Veggie boost: Stir in chopped mushrooms, zucchini or spinach.
  • Ricotta layer: Spoon a tablespoon of ricotta in the bottom of each pepper before filling.
  • Brown rice or quinoa: Swap in whole grains for extra fiber.

Getting the Sausage and Rice Filling Just Right

The filling is where this dish wins or loses, so it is worth a moment of attention. Mild sausage gives a gentle, family-friendly flavor, while hot sausage brings real warmth. If you are unsure, mix half and half. Brown the meat until it has little golden edges, because those crispy bits carry the most flavor and keep the filling from tasting steamed.

Cooked rice should be loose and cool or room temperature. Freshly cooked, steaming rice can turn mushy when stirred into the sauce. Day-old rice from the refrigerator is perfect, and it makes this a wonderful second-night dinner after a pot of rice earlier in the week.

Season the filling before it goes into the peppers, then taste a spoonful. The peppers themselves are mild, so the filling should taste slightly bolder than you think it needs to. A pinch of salt, a little extra Italian seasoning or a splash of the tomato sauce can bring everything into balance.

What to Serve with Stuffed Peppers

The peppers are a full meal on their own, but a simple side makes the plate feel complete. A crisp green salad with Italian vinaigrette is my first choice, along with garlic bread to soak up the extra tomato sauce.

For a heartier dinner, serve them alongside roasted potatoes or a pot of soup. A bowl of lasagna soup and a stuffed pepper makes a very cozy fall supper.

Stuffed Peppers for Meal Prep and Freezing

These peppers are one of my favorite meal prep recipes. Assemble them, cover tightly and refrigerate for up to 24 hours before baking, adding 10 extra minutes to the covered baking time. This makes them an easy answer to a busy evening.

To freeze, bake and cool the peppers completely, then wrap each one individually in foil and place in a freezer bag. Freeze up to 3 months, thaw overnight in the fridge and reheat in a 350°F (175°C) oven for 25 to 30 minutes, until hot in the center. You can also freeze just the filling and stuff fresh peppers later.

Make Ahead, Storage and Reheating

Because the filling contains ground pork, make sure it reaches 160°F (71°C). Refrigerate leftovers within 2 hours and see the USDA guidance on leftovers and food safety for more.

Store the peppers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F (175°C) oven, covered, for 15 to 20 minutes, or microwave a single pepper for 2 to 3 minutes. Add a spoonful of sauce if they look dry.

The filling is also excellent on its own. Spoon cold leftovers over a baked potato, or fold into scrambled eggs the next morning.
