Cheesy Baked Hot Crab Dip (Easy Party Appetizer)

This hot crab dip is the appetizer I make when I want a party to feel a little bit special. Big pieces of sweet lump crab are folded into a creamy base of cream cheese, sour cream, sharp cheddar, lemon and seafood seasoning, then baked until the top is golden and the edges are bubbling. It is rich, savory and impossible to stop scooping.

In this post I share why this recipe works, the ingredients, how to choose the best crab, the step-by-step method, what to serve with it, my favorite tips, variations, common mistakes and how to prep it ahead for a stress-free party. The printable recipe card with exact measurements and estimated nutrition is at the bottom of the post.

Why This Hot Crab Dip Works

A great crab dip should taste like crab first and cheese second. Many versions bury the seafood under too much filler, so I built this one around a lighter, tangy base that lets the crab shine.

  • A balanced creamy base. Cream cheese gives body, sour cream adds tang and a little mayonnaise keeps the dip silky and scoopable even as it cools.
  • Plenty of crab. A full pound of lump crab means you get real pieces of seafood in every bite.
  • Bright seasoning. Fresh lemon juice and zest, Dijon mustard and a few dashes of hot sauce wake up the rich cheese.
  • Classic seafood spice. Chesapeake-style seafood seasoning, with celery salt, paprika and pepper, gives the dip its signature coastal flavor.
  • Gentle folding. The crab goes in last and is folded carefully so the lumps stay intact.

The result is a crowd-pleasing baked crab dip that tastes like it came from a seaside restaurant but takes only 15 minutes of hands-on work.

Ingredients You Will Need

Most of these ingredients are pantry and fridge staples. The crab is the splurge, so it is worth buying the good stuff.

  • Lump crab meat: One pound (450 g), picked over for shells. Refrigerated pasteurized lump crab in a tub is the best balance of quality and price.
  • Cream cheese: One 8-ounce block (225 g), softened so it mixes smoothly.
  • Sour cream and mayonnaise: These loosen the base and add tang and silkiness.
  • Sharp cheddar: One and a half cups total, shredded from a block. Some goes inside and some goes on top.
  • Lemon: Both zest and juice to brighten the dip.
  • Seasonings: Chesapeake-style seafood seasoning, Dijon mustard, Worcestershire sauce, garlic powder and hot sauce.
  • Green onions and parsley: For color and fresh flavor.
Quick tip: Spread the crab on a plate and run your fingers lightly through it to find any bits of shell. Feel, do not squeeze, so the lumps stay whole.

If your crab is very wet, drain it in a fine-mesh strainer for a few minutes and pat it gently with paper towels. Excess liquid can make the dip watery in the oven.

Choosing the Best Crab for Crab Dip

The kind of crab you buy has the biggest impact on flavor and texture. Here is a quick guide to the options at most grocery stores.

  • Jumbo lump: The largest, most beautiful pieces. Delicious, but expensive and a bit wasted in a dip.
  • Lump: My favorite choice. Big enough pieces to taste, at a more reasonable price.
  • Backfin: Smaller flakes mixed with broken lump. A good budget option that still tastes like real crab.
  • Claw meat: Darker and more strongly flavored. Great mixed half and half with lump.
  • Canned shelf-stable crab: Works in a pinch. Drain it very well and add an extra squeeze of lemon.
  • Imitation crab: Made from fish and starch. It is fine for a budget dip, but the flavor and texture are quite different.

Whatever you buy, keep crab cold until the moment you use it, and use it within the date on the container once opened.

How to Make Hot Crab Dip

Heat your oven to 375°F (190°C) and lightly butter a 1 1/2-quart shallow baking dish or a 9-inch pie plate. A shallow dish gives you more of that golden, cheesy top.

  1. Mix the base. In a large bowl, beat the softened cream cheese, sour cream and mayonnaise until smooth.
  2. Season it. Stir in the lemon zest and juice, Dijon, Worcestershire, seafood seasoning, garlic powder and hot sauce.
  3. Add cheese and onions. Stir in 1 cup of the cheddar, most of the green onions and the parsley.
  4. Fold in the crab. Add the crab and fold gently with a spatula just until coated, keeping the lumps as intact as possible.
  5. Top and bake. Spread the dip in the baking dish, sprinkle with the remaining 1/2 cup of cheddar and a light dusting of seafood seasoning. Bake for 20 to 25 minutes, until bubbling at the edges and golden on top.
  6. Check the center. The middle should be hot all the way through and reach 165°F (74°C) on an instant-read thermometer.
  7. Garnish and serve. Let it rest for 5 minutes, then top with the remaining green onions and serve warm.

For an extra-golden top, switch the oven to broil for the last 1 to 2 minutes and watch it closely. Cheese goes from golden to burnt very quickly under a broiler.

What to Serve With Baked Crab Dip

You want sturdy dippers that can handle a thick, cheesy scoop without breaking. Here are my favorites.

  • Toasted baguette slices: Brush with olive oil and bake at 375°F (190°C) for 8 to 10 minutes.
  • Crackers: Buttery round crackers, water crackers or seeded crisps.
  • Pita chips and soft pretzel bites: Both are sturdy and salty.
  • Vegetables: Celery sticks, endive leaves, cucumber rounds and mini sweet peppers.
  • Bread bowl: Hollow out a round sourdough loaf, fill with dip and bake, using the torn bread for dipping.

For a seafood-themed party, pair it with a big platter of shrimp cocktail or a main dish of garlic butter shrimp scampi pasta. On a holiday appetizer table, it sits beautifully next to sweet and salty goat cheese bacon wrapped dates.

How Much Crab Dip to Make

One batch serves about 10 people as part of a larger appetizer spread, or 6 when it is the main snack. For 20 or more guests, make two batches and bake them in separate dishes, about 15 minutes apart, so a hot dish is always coming out of the oven. Plan on roughly one sleeve of crackers or one baguette per batch, and set out small spreaders so guests can scoop without breaking their crackers.

Tips for the Best Hot Crab Dip

  • Soften the cream cheese fully. It is the key to a smooth, lump-free dip.
  • Do not overmix the crab. Fold gently at the very end to keep big, meaty pieces.
  • Drain wet crab. Excess liquid makes the dip loose and watery.
  • Use a shallow dish. More surface area means more golden, bubbly cheese and faster, more even heating.
  • Taste before baking. Every seafood seasoning has a different salt level, so adjust the seasoning before the dip goes in the oven.
  • Serve warm, not scorching. A 5-minute rest lets the dip thicken and makes it easier to scoop.

Easy Variations

  • Crab and artichoke: Fold in 1 cup of chopped, well-drained marinated artichoke hearts.
  • Spinach crab dip: Add 1 cup of thawed, squeezed-dry frozen spinach for color and extra veggies.
  • Cheesy mozzarella: Swap the cheddar for mozzarella and parmesan for a milder, stretchier dip.
  • Spicy: Add a minced jalapeño and swap half of the cheddar for pepper jack.
  • Crab and shrimp: Replace half of the crab with chopped cooked shrimp.
  • Slow cooker: Mix everything except the topping in a small greased slow cooker and cook on low for 1 1/2 to 2 hours, stirring once, until hot. Top with cheese for the last 15 minutes and keep it on the warm setting.

Whichever twist you choose, keep the creamy base and lemon the same so the dip stays balanced and bright.

Common Mistakes and How to Fix Them

Here are the most common crab dip problems and the simple fixes for each.

Lumpy baseCold cream cheeseSoften it fully and beat before adding anything else

Cold centerDish too deep or dip went in cold from the fridgeUse a shallow dish and add 10 minutes if refrigerated

Make Ahead, Storage and Reheating

You can assemble the dip up to 24 hours ahead. Spread it in the baking dish, cover tightly and refrigerate. When ready, add the cheese topping and bake for 30 to 35 minutes, until hot in the center. Seafood is very perishable, so keep the dip refrigerated until baking and do not leave it out for more than 2 hours. The FDA shares helpful tips on selecting and serving seafood safely.

Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a small baking dish at 350°F (175°C) for 15 to 20 minutes, or microwave in 30-second bursts, stirring between each, until it reaches 165°F (74°C).

I do not recommend freezing crab dip, because the dairy separates and the crab turns stringy once thawed. Luckily, it is so quick to mix up that making it fresh is easy.
