Gingerbread Loaf with Cream Cheese Frosting

When the weather turns cold and the holiday music starts playing, my kitchen smells like ginger and molasses almost every weekend. This gingerbread loaf is the reason. It has all the cozy flavor of a gingerbread cookie in a soft, moist quick bread, and it is topped with a thick swoosh of tangy cream cheese frosting that balances the dark, spicy crumb perfectly.

In this post I explain why the loaf stays moist for days, which molasses to buy, and how to tell when the center is fully baked. You will also find spice tips, variations, a troubleshooting table and make-ahead and freezing advice. The printable recipe card with exact measurements is waiting at the bottom of the post.

Why This Gingerbread Loaf Works

Many gingerbread recipes are either too dry or too dense. This loaf is soft, tender and full of flavor, thanks to a few simple choices in the batter.

  • Melted butter and brown sugar. Melted butter makes a one-bowl batter with no mixer, and brown sugar adds moisture and a caramel note.
  • Plenty of molasses. Half a cup of molasses gives the classic dark color, a deep flavor and a crumb that stays moist for days.
  • Buttermilk for tenderness. Its gentle acidity reacts with the baking soda for a good rise and a soft, velvety texture.
  • A bold spice blend. Ground ginger leads, with cinnamon, cloves, nutmeg and a pinch of black pepper for warmth without bitterness.
  • A moderate oven. Baking at 350°F (175°C) lets the center cook through before the molasses-rich crust gets too dark.

The cream cheese frosting is the finishing touch. Its tang cuts through the spice and sweetness, turning a simple quick bread into a dessert worthy of your holiday table.

Ingredients You Will Need

You probably have most of these already in your baking cabinet. The only special item is molasses, which is easy to find near the syrups at any grocery store.

  • All-purpose flour: Spoon it into the measuring cup and level it to avoid a dry loaf.
  • Baking soda and baking powder: Soda reacts with the molasses and buttermilk, while a little powder adds extra lift.
  • Spices: Ground ginger, cinnamon, cloves, nutmeg and a tiny pinch of black pepper.
  • Unsalted butter: Melted and slightly cooled.
  • Light brown sugar: Packed. It keeps the loaf moist.
  • Molasses: Use regular unsulphured molasses, not blackstrap, which is too bitter for baking.
  • Eggs and buttermilk: At room temperature so the melted butter does not firm up.
  • For the frosting: Softened cream cheese and butter, powdered sugar, vanilla and a pinch of cinnamon.
  • Optional topping: Finely chopped crystallized ginger for sparkle and a little heat.
Quick tip: Lightly grease your measuring cup before measuring the molasses. It will slide right out, and you will get the full amount into the batter.

How to Make a Gingerbread Loaf

This is a true one-bowl quick bread. Mix the wet ingredients, stir in the dry ones and bake. The frosting goes on once the loaf is completely cool.

  1. Prep the pan. Heat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with a parchment sling.
  2. Mix the wet ingredients. In a large bowl, whisk the melted butter, brown sugar and molasses until smooth. Whisk in the eggs one at a time, then the buttermilk and vanilla.
  3. Add the dry ingredients. Sprinkle the baking soda, baking powder, salt and spices over the batter and whisk briefly, then add the flour and fold with a spatula just until no dry flour remains.
  4. Bake. Pour the batter into the pan and bake for 50 to 60 minutes, until a toothpick in the center comes out clean or with a few moist crumbs. Tent with foil after 35 minutes if the top darkens quickly.
  5. Cool. Let the loaf cool in the pan for 15 minutes, then lift it out with the parchment and cool completely on a wire rack, about 1 1/2 hours.
  6. Make the frosting. Beat the cream cheese and butter until smooth, then beat in the powdered sugar, vanilla and cinnamon until fluffy.
  7. Frost and serve. Spread the frosting over the top of the cooled loaf, sprinkle with crystallized ginger and slice with a serrated knife.

An instant-read thermometer is a helpful backup. The center of the loaf should read about 200 to 205°F (93 to 96°C) when it is fully baked.

Tips for the Best Gingerbread Bread

  • Do not overmix once the flour goes in. A few gentle folds keep the crumb tender instead of tough and tunneled.
  • Use fresh spices. Ground ginger loses its punch after about a year, so give your jar a sniff before baking.
  • Check the loaf at 50 minutes. Ovens vary, and molasses batters can look done on top before the center is set.
  • Frost only a completely cool loaf, or the frosting will melt and slide down the sides.
  • For extra-clean slices, chill the frosted loaf for 20 minutes before cutting.
  • Wrap the loaf overnight before frosting for an even moister, more flavorful crumb. The spices deepen as it rests.

Choosing Molasses and Spices

Molasses is the heart of any gingerbread, so it is worth knowing the difference between the types on the shelf.

  • Light or mild molasses: Sweet and gentle. It makes a lighter colored loaf with a subtle flavor.
  • Dark or robust molasses: My favorite here. It gives a deeper color and a bolder gingerbread flavor without bitterness.
  • Blackstrap molasses: Very dark, less sweet and quite bitter. Skip it for this recipe, or use no more than 2 tablespoons mixed with regular molasses.

For the spices, ground ginger should be the star at 1 tablespoon. If you love heat, add 1 teaspoon of freshly grated ginger to the wet ingredients along with the ground ginger. Cloves are strong, so measure carefully, and do not skip the tiny pinch of black pepper. You will not taste it directly, but it makes the ginger flavor brighter and warmer.

Finally, check the date on your baking soda. Because this batter depends on soda reacting with molasses and buttermilk, an old box can leave the loaf heavy and flat. Fresh soda gives a gentle dome and an even, tender crumb.

Easy Variations

  • Gingerbread loaf with glaze: Skip the frosting and drizzle with a simple glaze of 1 cup powdered sugar and 2 tablespoons milk.
  • Orange gingerbread: Add the zest of one orange to the batter and use orange juice instead of milk in a glaze.
  • Chocolate chip gingerbread: Fold 3/4 cup semisweet mini chocolate chips into the batter.
  • Mini loaves: Divide the batter among 3 mini loaf pans and bake for 30 to 35 minutes. They make great holiday gifts.
  • Muffins: Fill 12 lined muffin cups and bake for 18 to 22 minutes.
  • Dairy swap: No buttermilk? Stir 1 1/2 teaspoons lemon juice into 1/2 cup milk and let it stand for 5 minutes.

Make Ahead, Storage and Freezing

An unfrosted gingerbread loaf keeps tightly wrapped at room temperature for up to 3 days, and the flavor actually improves on day two. Once frosted, store the loaf covered in the refrigerator for up to 5 days and let slices sit out for 15 minutes before serving.

Because the frosting contains cream cheese, do not leave the frosted loaf at room temperature for more than 2 hours. For more about storing baked goods and leftovers safely, see the USDA FSIS guide to leftovers and food safety.

To freeze, wrap the cooled, unfrosted loaf in plastic wrap and foil and freeze for up to 3 months. Thaw it overnight at room temperature in its wrapping, then frost. You can also freeze individual slices for quick breakfasts and snacks.

Serving and Gifting Ideas

A slice of gingerbread loaf is wonderful with coffee, hot cider or a mug of tea on a cold morning. It also makes a lovely dessert served slightly warm with a spoonful of whipped cream.

For a holiday brunch, set out the loaf on a board with whipped butter, a bowl of fresh orange segments and a pot of strong coffee. Leftover slices are also excellent toasted in a dry skillet for a minute per side, which warms the spices and gives the edges a light crunch. If the slices are frosted, toast them unfrosted and add a small dollop of the frosting on top after toasting. It is a cozy way to stretch one loaf over a whole weekend of slow holiday mornings.

For holiday gifts, bake mini loaves, let them cool, frost them and wrap them in clear cellophane with a ribbon and a tag reminding the recipient to keep them refrigerated. With Christmas on Friday, December 25, plan to bake and freeze unfrosted loaves the week before, then frost them the day you deliver them. Add a few chewy molasses cookies to the basket for a full gingerbread-themed gift.

Frequently Asked Questions

What is the difference between gingerbread loaf and gingerbread cake?

They use a similar spiced molasses batter. A loaf is baked in a 9×5 pan and sliced like bread, while gingerbread cake is usually baked in a square pan.

Can I make this gingerbread loaf without frosting?

Yes. It is delicious plain, with a simple powdered sugar glaze or with a dusting of powdered sugar.

Why did my gingerbread loaf sink?

It was most likely underbaked. Bake until a toothpick comes out clean and the center reaches about 200°F (93°C).

Can I use blackstrap molasses?

It is too bitter on its own. Use regular unsulphured molasses, or replace only 2 tablespoons with blackstrap.

How long does a gingerbread loaf with cream cheese frosting last?

Up to 5 days covered in the refrigerator. Unfrosted, it keeps 3 days at room temperature or 3 months in the freezer.
