Crockpot Crack Chicken with Bacon and Ranch

Crack chicken earned its funny nickname honestly: once you take a bite, it is very hard to stop. Tender chicken breasts cook low and slow with cream cheese and ranch seasoning, then get shredded and tossed with crispy bacon and melted cheddar until every strand is coated in a rich, tangy, savory sauce. Some people call it bacon ranch chicken, and either name fits.

In this post I cover why the recipe works, the ingredients, how to make it step by step, a homemade ranch seasoning, serving ideas, tips, variations, common mistakes and storage. The printable recipe card with exact measurements and estimated nutrition is at the bottom of the post.

Why This Crockpot Crack Chicken Works

  • Ten minutes of hands-on time. Everything goes into the slow cooker raw, except the bacon and cheese, which you stir in at the end.
  • Cream cheese melts into a silky sauce. It blends with the chicken juices into a creamy coating that never breaks.
  • Ranch seasoning brings big flavor. Garlic, onion, dill and herbs season the chicken all the way through.
  • Bacon added at the end stays crisp. Cooking it separately keeps it from turning soft and chewy in the crockpot.
  • Endlessly versatile. Pile it on buns, roll it in tortillas, spoon it over baked potatoes or scoop it with crackers.

It is the kind of weeknight dinner that feels like a treat, yet it needs almost no effort. It is also a lifesaver during the busy holiday season, when the oven is full and you still need something warm and filling on the table.

Because the flavor is savory, cheesy and only lightly tangy, it is a big hit with kids and picky eaters. I also love that it doubles as a game-day dip, so one pot can cover dinner on Saturday and snacks on Sunday.

Ingredients You Will Need

You only need a handful of simple ingredients, most of which you probably already have.

  • Chicken breasts: Two pounds of boneless, skinless chicken breasts, fully thawed. Boneless thighs work too and stay extra juicy.
  • Cream cheese: One 8-ounce block, cubed. Full-fat cream cheese gives the smoothest sauce.
  • Ranch seasoning: One 1-ounce packet of dry ranch dressing mix, or 3 tablespoons of my homemade blend below.
  • Chicken broth: A quarter cup, to keep things from scorching early in the cook.
  • Bacon: Eight slices, cooked until crisp and crumbled.
  • Cheddar: One cup of sharp cheddar, freshly shredded.
  • Green onions: Two or three, sliced, for a fresh finish.
Quick tip: Always thaw the chicken first. Frozen chicken spends too long in the temperature danger zone in a slow cooker and releases extra water that thins the sauce.

If you like more sauce for dipping or for spooning over rice, add an extra 4 ounces of cream cheese and a splash more broth when you shred the chicken.

How to Make Crack Chicken in the Crockpot

Use a 4 to 6-quart slow cooker. A slightly smaller cooker keeps the chicken submerged in the sauce as it cooks.

  1. Layer the chicken. Arrange the chicken breasts in a single layer in the slow cooker and pour the broth around them.
  2. Season. Sprinkle the ranch seasoning evenly over the chicken and scatter the cubed cream cheese on top.
  3. Slow cook. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken reaches 165°F (74°C) in the thickest part and shreds easily.
  4. Cook the bacon. While the chicken cooks, fry or bake the bacon until crisp, then drain and crumble it.
  5. Shred. Shred the chicken right in the crockpot with two forks and stir until the cream cheese and juices form a smooth sauce.
  6. Finish. Stir in most of the bacon and cheddar, cover for 10 minutes until the cheese melts, then top with the remaining bacon, cheese and green onions.

If the sauce looks lumpy when you first stir, keep going. The cream cheese sometimes needs a minute or two of stirring to melt fully into the warm juices. A splash of broth or milk helps loosen it if it seems too thick.

Taste before serving. Ranch mix, bacon and cheese are all salty, so you will rarely need extra salt, but a few grinds of black pepper and a squeeze of lemon brighten everything up.

Chicken Breasts or Thighs?

Both cuts work beautifully in this recipe, and the choice comes down to taste and timing.

  • Chicken breasts give you lean, neat shreds that look great on sandwiches. They cook a little faster, so keep an eye on them toward the end.
  • Boneless thighs are richer and more forgiving. They stay juicy even if dinner runs late, and they shred into tender, silky pieces.
  • A mix of both is my favorite compromise when I am feeding a crowd: the breasts bring structure and the thighs bring moisture.

Whichever you choose, trim off any large pieces of fat before cooking, and try to use pieces of a similar size so they all finish cooking at the same time.

Homemade Ranch Seasoning

I often make my own ranch mix so I can control the salt. Stir together 1 tablespoon of dried parsley, 1 teaspoon of dried dill, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of dried chives, 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Use about 3 tablespoons in place of one packet.

Store extra in a small jar in the pantry for up to 6 months. It is also great sprinkled on roasted potatoes, popcorn or stirred into sour cream for a quick dip.

How to Serve Slow Cooker Crack Chicken

This is one of the most flexible recipes in my kitchen. Here are our favorite ways to serve it.

  • Sandwiches and sliders: Pile it onto toasted buns or soft slider rolls with a few pickles.
  • Wraps and tacos: Roll it in flour tortillas with shredded lettuce and tomato.
  • Low-carb bowls: Spoon it into lettuce cups or over cauliflower rice.
  • Comfort bowls: Serve it over white rice, egg noodles or a split baked potato.
  • Party dip: Keep it on warm in the slow cooker with crackers, tortilla chips and celery sticks.

For a party, I set out the crockpot with a basket of slider buns and a bowl of pickles and let everyone build their own sandwiches. It keeps beautifully on the warm setting for a couple of hours.

Tips for the Best Crack Chicken

  • Do not overcook. Chicken breast can turn stringy and dry if it cooks far past tender. Start checking at the low end of the time range.
  • Use full-fat cream cheese. Light versions can turn grainy in the slow cooker.
  • Shred in the sauce. Shredding right in the crockpot lets the chicken soak up every bit of flavor.
  • Add the bacon last. It keeps its crunch and smoky flavor.
  • Check the temperature. An instant-read thermometer takes the guesswork out. You are looking for 165°F (74°C).

Easy Variations

  • Buffalo: Stir in 1/3 cup of hot sauce with the cheese and top with crumbled blue cheese.
  • Jalapeño popper: Add 2 diced, seeded jalapeños and use pepper jack instead of cheddar.
  • Pasta night: Toss with 12 ounces of cooked penne and a splash of the pasta water.
  • Chicken thighs: Use boneless thighs and cook on low for 6 hours for even juicier results.
  • Instant Pot: Cook the chicken with 1/2 cup of broth and the ranch on high pressure for 12 minutes, natural release for 10, then stir in the cream cheese, bacon and cheddar.
  • Lighter: Use Neufchâtel cheese, turkey bacon and half the cheddar.

No matter which version you make, the method stays the same: cook the chicken until tender, shred it in the creamy sauce and fold in the toppings at the end. Leftovers from any version make a great filling for quesadillas or a topping for loaded baked potatoes the next day.

Common Mistakes and How to Fix Them

This recipe is very forgiving, but a few common slip-ups can lead to dry chicken or a thin sauce. Here is how to keep every batch creamy and tender.

Thin, watery sauceFrozen chicken or too much brothThaw the chicken and simmer uncovered 15 minutes

Make Ahead, Storage and Freezing

Refrigerate leftovers within 2 hours in an airtight container for up to 4 days. Reheat in a saucepan over low heat or in the microwave with a splash of broth, stirring often, until hot, 165°F (74°C). Keep the extra bacon separate if you can so it stays crisp.

Thaw chicken in the refrigerator before slow cooking, and keep the lid on while it cooks so the temperature stays steady. The USDA explains more in its guide to slow cookers and food safety.

To freeze, cool the shredded chicken completely and freeze it in freezer bags or containers for up to 3 months. Thaw overnight in the fridge and reheat gently. The sauce may look a little separated at first, but a good stir with a spoonful of milk brings it right back.

Frequently Asked Questions

Why is it called crack chicken?

It is a playful nickname for how hard it is to stop eating it. You can call it bacon ranch chicken or cheesy ranch chicken if you prefer.

Can I put frozen chicken in the crockpot?

No. The USDA recommends thawing chicken first, because frozen chicken can stay too long in the temperature danger zone in a slow cooker.

How long does crack chicken take on high?

About 3 to 4 hours on high, or 5 to 6 hours on low, until the chicken reaches 165°F (74°C) and shreds easily.

Can I make crack chicken without a ranch packet?

Yes. Use about 3 tablespoons of the homemade ranch seasoning blend in this post.

What is the best way to serve crack chicken?

It is delicious on buns, in wraps, over rice or baked potatoes, in lettuce cups or as a warm dip with crackers.
