Cranberry Brie Bites (Easy Puff Pastry Holiday Appetizer)

If I could bring only one appetizer to every holiday party, it would be these cranberry brie bites. Buttery puff pastry bakes into crisp little cups around a cube of creamy brie, a spoonful of tangy cranberry sauce and a sprinkle of toasted pecans. They look fancy, taste like the holidays, and take about 15 minutes of actual work.

In this post I share why the recipe works so well, the best brie and pastry to buy, step-by-step directions, tips for crisp bottoms, fun variations and exactly how to prep them ahead for a busy Thanksgiving or Christmas. You will also find serving ideas, fixes for common mistakes, and the printable recipe card at the bottom of the post.

Why These Cranberry Brie Bites Work

Great party food needs to be easy to eat with one hand, hold up on a platter and appeal to almost everyone. These bites check every box.

  • Sweet, tart and savory. Rich brie and buttery pastry are balanced by bright cranberry and a pinch of flaky salt.
  • Built-in crunch. Toasted pecans and crisp pastry edges keep each bite from feeling heavy.
  • Only a few ingredients. Puff pastry, brie, cranberry sauce, nuts and herbs. That is really it.
  • Perfect portion size. A mini muffin pan gives you uniform cups that stay neat and are easy to pick up.
  • Holiday flexible. They fit a Thanksgiving appetizer spread just as well as a Christmas cocktail party or New Year buffet.

They are also a smart way to use up leftover cranberry sauce after Thanksgiving, which makes them a welcome encore during the weekend that follows.

Best of all, they are forgiving. Store-bought pastry and canned sauce produce excellent results, so even a nervous host can pull them off. Once you have made them once, you will be able to assemble a tray almost from memory, which is exactly what you want when guests are arriving and the kitchen is busy.

Ingredients You Will Need

Everything here can be found at a regular grocery store. A little attention to quality goes a long way.

  • Puff pastry: One sheet of frozen puff pastry, thawed in the refrigerator. All-butter pastry tastes richest, but any brand works.
  • Brie: An 8-ounce wheel or wedge of double-cream brie. Leave the rind on; it is edible and helps the cubes hold their shape.
  • Cranberry sauce: Whole-berry cranberry sauce, homemade or canned. Whole-berry has more texture than jellied sauce.
  • Pecans: A small handful, chopped and toasted. Walnuts or pistachios are good swaps.
  • Fresh rosemary or thyme: Finely chopped for a fragrant, piney finish that looks festive.
  • Honey and flaky salt: Optional, but a light drizzle and a pinch of salt right before serving make these taste restaurant-worthy.
  • Flour: Just a little for rolling the pastry.
Quick tip: Cut the brie while it is cold, straight from the refrigerator. Warm brie smears and sticks to the knife, while cold brie cuts into tidy cubes.

When choosing brie, you do not need anything expensive. A mild supermarket double-cream brie melts beautifully and lets the cranberry shine. Triple-cream brie is even more luxurious but very soft, so freeze it for 15 minutes before cubing. Camembert is a great substitute with a slightly earthier, more mushroomy flavor.

If you have homemade cranberry sauce left over from Thanksgiving, use it here. A sauce with a little orange zest is especially good. If your sauce is very loose, simmer it for a few minutes to thicken it, or drain off some of the liquid, so it does not soak into the pastry.

How to Make Cranberry Brie Bites

You will need a 24-cup mini muffin pan. If you only have a 12-cup pan, bake in two batches and keep the second batch of pastry squares chilled while the first bakes.

  1. Heat the oven. Preheat to 375°F (190°C) and lightly grease a 24-cup mini muffin pan with butter or nonstick spray.
  2. Roll the pastry. On a lightly floured surface, roll the thawed puff pastry into a 12-inch (30 cm) square, about 1/8 inch thick.
  3. Cut squares. Cut the pastry into 24 roughly 2-inch squares using a sharp knife or pizza cutter.
  4. Shape the cups. Press each square gently into a muffin cup, letting the corners stand up above the rim.
  5. Fill. Tuck a 1/2-inch cube of brie into each cup, then top with about 1 teaspoon of cranberry sauce and a few chopped pecans.
  6. Bake. Bake for 15 to 18 minutes, until the pastry is puffed and deep golden and the brie is melted.
  7. Finish. Cool in the pan for 5 minutes, then lift out, sprinkle with rosemary and flaky salt, and drizzle lightly with honey.

If the centers puff up while baking, gently press them down with the back of a teaspoon as soon as they come out of the oven. The brie will still be soft and the cups will settle.

No mini muffin pan? Cut the pastry into squares, place them on a parchment-lined sheet pan, top each square with brie and cranberry, and fold the corners up slightly. They bake into rustic little tarts in about the same time and taste just as good.

Tips for the Best Puff Pastry Brie Bites

  • Keep the pastry cold. If it becomes soft or sticky while you work, pop it back in the refrigerator for 10 minutes.
  • Do not overfill. About 1 teaspoon of cranberry sauce per cup is plenty; too much will bubble over and make the pastry soggy.
  • Bake until truly golden. Pale pastry tastes doughy, so give it the full time.
  • Toast the pecans first in a dry skillet for 3 to 4 minutes for the best flavor.
  • Serve warm or at room temperature. They are delicious either way, which makes them ideal for a buffet.

Planning a full spread? These pair perfectly with a warm baked spinach artichoke dip and savory sausage stuffed mushrooms. You can find even more ideas in my easy appetizer recipes collection.

Serving Cranberry Brie Bites for Thanksgiving and Christmas

These bites are one of my favorite holiday appetizers because they bridge both big holidays. For Thanksgiving on Thursday, November 26, 2026, I set them out while the turkey rests so guests have something light to nibble without spoiling dinner.

For Christmas gatherings, I arrange them on a wooden board with fresh rosemary sprigs and a few sugared cranberries so the platter looks like a little wreath. They also fit beautifully on a holiday grazing board next to cheeses, crackers and fruit.

For a party, plan on 2 to 3 bites per guest if you are serving several appetizers, or 4 to 5 per guest if these are one of only two or three nibbles. One batch of 24 serves about 8 to 10 people as part of a larger spread.

Easy Variations

  • Fig and brie: Swap the cranberry sauce for fig jam and top with chopped walnuts.
  • Hot honey: Drizzle with hot honey instead of regular honey for a sweet and spicy kick.
  • Pepper jelly: Use red pepper jelly for a tangy, slightly spicy Christmas version.
  • Crescent dough: Use a tube of crescent roll dough if you cannot find puff pastry. The cups will be softer and more bread-like.
  • Phyllo cups: Use store-bought mini phyllo shells and bake only 6 to 8 minutes, just until the brie melts.
  • Prosciutto: Tuck a small piece of prosciutto under the brie for a salty, savory version.

What to Serve With Brie Bites

Because these are rich and slightly sweet, I like to balance the table with something fresh and something hearty. A crisp green salad or crudite platter adds crunch, while a meaty appetizer or dip keeps hungry guests happy.

A few of my favorite pairings are a bowl of marinated olives, a simple shrimp cocktail, crispy wings or a warm cheesy dip. If the bites are part of a sit-down dinner, serve two per person on small plates with a handful of lightly dressed arugula for an elegant first course.

For drinks, sparkling cider, a cranberry spritzer or a dry sparkling wine all pair wonderfully with brie and cranberry. If you are building a Christmas menu, these sit happily next to a cheesy Christmas tree pull-apart bread on the same buffet.

Make Ahead, Storage and Reheating

To prep ahead, shape and fill the pastry cups, cover the pan tightly and refrigerate for up to 24 hours, then bake straight from the fridge, adding a minute or two. Brie is a soft cheese, so baked bites should not sit out longer than 2 hours; the USDA leftovers and food safety guide explains why that 2-hour rule matters.

Refrigerate leftovers in an airtight container for up to 3 days. Reheat on a sheet pan at 350°F (175°C) for 5 to 7 minutes to re-crisp the pastry; the microwave will make it soft. You can also freeze unbaked filled cups on a tray, transfer them to a freezer bag, and bake from frozen for 20 to 22 minutes.

Frequently Asked Questions

Do you remove the rind from brie for brie bites?

No. The rind is edible and helps the cheese hold its shape as it melts. Remove it only if you prefer a smoother texture.

Can I use canned cranberry sauce?

Yes. Whole-berry canned cranberry sauce works very well and saves time. Jellied sauce also works if you dice it small.

Can I make cranberry brie bites ahead of time?

Yes. Assemble them up to 24 hours ahead, refrigerate, and bake just before serving for the crispest pastry.

What can I use instead of puff pastry?

Crescent roll dough or store-bought mini phyllo shells both work. Phyllo shells need only 6 to 8 minutes in the oven.

How many brie bites per person?

Plan 2 to 3 per guest alongside other appetizers, or 4 to 5 per guest if they are one of only a few options.
