Ingredients

Bread bowl
  • 1 round sourdough loaf about 1 1/2 pounds (680 g)
  • 2 tablespoons olive oil for toasting the bread cubes
  • 1/2 teaspoon garlic powder
Dip
  • 8 ounces cream cheese softened (225 g)
  • 1/2 cup sour cream 115 g
  • 1/4 cup mayonnaise 60 g
  • 10 ounces frozen chopped spinach thawed and squeezed very dry (280 g)
  • 14 ounces canned artichoke hearts drained, patted dry and chopped (400 g)
  • 3 cloves garlic minced
  • 3/4 cup grated Parmesan 75 g
  • 1 1/2 cups shredded mozzarella divided (170 g)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Method

Prepare the bread
  1. Preheat the oven to 350°F (175°C).
  2. Cut a lid off the top of the loaf and scoop out the center, leaving a 1-inch wall. Cube the removed bread.
  3. Toss the cubes with olive oil, salt and garlic powder and bake on a sheet pan for 10 to 12 minutes until crisp.
Make the dip
  1. Beat the cream cheese, sour cream and mayonnaise until smooth. Stir in the spinach, artichokes, garlic, Parmesan, half the mozzarella and the seasonings.
Bake
  1. Set the hollowed loaf on a lined rimmed pan. Spoon in the dip and top with the remaining mozzarella.
  2. Bake for 30 to 35 minutes until bubbling and golden. Broil for 1 to 2 minutes if you like more color.
  3. Rest for 5 minutes and serve with the toasted bread cubes, crackers and vegetables.

Notes
