Ingredients

Dough
  • 3 1/4 cups all-purpose flour (410 g)
  • 2 1/4 teaspoons instant yeast one packet
  • 1 tablespoon sugar
  • 1 1/4 teaspoons kosher salt
  • 1 cup warm water about 110°F (240 ml)
  • 2 tablespoons unsalted butter melted
Filling
  • 4 ounces cream cheese softened (115 g)
  • 1/2 cup frozen chopped spinach thawed and squeezed very dry
  • 3/4 cup shredded mozzarella (75 g)
  • 1/4 cup grated Parmesan (25 g)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
Topping
  • 2 tablespoons baking soda dissolved in 1/2 cup hot water
  • 1 large egg beaten with 1 tablespoon water
  • 1 teaspoon coarse salt

Method

  1. Stir the flour, yeast, sugar and salt together. Add the warm water and melted butter and mix to a soft dough.
  2. Knead 6 to 8 minutes in a mixer or 8 to 10 minutes by hand until smooth. Place in a greased bowl, cover and let rise about 1 hour until doubled.
  3. Mix the cream cheese, spinach, mozzarella, Parmesan, garlic powder and pepper for the filling.
  4. Preheat the oven to 400°F (200°C). Divide the dough into 16 pieces, flatten each, add about 2 teaspoons filling, pinch to seal and roll into a ball.
  5. Place a small oven-safe bowl in the center of a parchment-lined baking sheet and arrange the balls around it, seam side down.
  6. Brush with the baking soda solution, then the egg wash, and sprinkle with coarse salt.
  7. Bake 18 to 22 minutes until deep golden. Cool 5 to 10 minutes, fill the center bowl with dip and serve warm.

Notes

Make ahead: Make the filling a day ahead and refrigerate. Shape the wreath up to 2 hours before baking.
