  • 3 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt
  • 2 teaspoons cornstarch mixed with 1 tablespoon water
  • 1 teaspoon lemon juice
Pastry
  • 2 sheets puff pastry or pie dough rounds thawed and cold
  • 1/2 cup thick caramel divided
Finish
  • 1 egg beaten with 1 tablespoon water
  • 2 tablespoons coarse sugar
  • 1 teaspoon flaky sea salt

Method

  1. Cook apples with butter, sugar, spices and salt for 6 to 8 minutes, then stir in the cornstarch mixture and cook 1 minute. Cool completely.

  3. Roll the pastry and cut sixteen 4 inch pieces.
  4. Fill eight pieces with apples and a teaspoon of caramel.
  5. Brush the edges with egg wash, top with the remaining pieces and crimp to seal.
  6. Cut steam slits, chill 15 minutes, then brush with egg wash and sprinkle with coarse sugar.
  7. Bake 20 to 25 minutes until deep golden.
  8. Cool 10 minutes and drizzle with warm caramel and flaky salt.

Notes

Cool the filling fully to prevent leaks. Reheat leftovers in an oven, not a microwave.
