Ingredients

Coffee soak
  • 2 cups strong brewed coffee or espresso cooled completely (480 ml)
  • 2 tablespoons pure maple syrup
Pumpkin cream
  • 1 1/2 cups heavy whipping cream cold (360 ml)
  • 16 ounces mascarpone cheese cold (454 g)
  • 1 can pumpkin puree 15 ounces, blotted (425 g)
  • 1 1/4 cups powdered sugar (150 g)
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons pure vanilla extract
  • 1 pinch salt
Assembly
  • 2 packages crisp ladyfingers (savoiardi) 7 ounces each, about 48 (400 g)
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon ground cinnamon

Method

  1. Stir the maple syrup into the cooled coffee and pour into a shallow dish.
  2. Beat the cold heavy cream to medium-stiff peaks and refrigerate.
  3. Beat the mascarpone, pumpkin puree, powdered sugar, pumpkin pie spice, vanilla and salt on medium-low just until smooth, about 1 minute.
  4. Fold the whipped cream into the pumpkin mixture in two additions until no streaks remain.
  5. Dip half of the ladyfingers into the coffee for about 1 second per side and arrange in a single layer in a 9 by 13-inch dish.
  6. Spread half of the pumpkin cream over the ladyfingers.
  7. Repeat with the remaining ladyfingers and cream, smoothing the top.
  8. Cover and refrigerate for at least 6 hours or overnight.
  9. Just before serving, sift the cocoa and cinnamon over the top. Slice and serve cold.
