Ingredients

  • 1 large sweet onion such as Vidalia, about 12 ounces (340 g)
  • 2 cups finely shredded Parmesan from a block (about 200 g)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped, optional
  • ranch or marinara for dipping

Method

  1. Preheat the oven to 400°F (205°C) and line two large baking sheets with parchment paper.
  2. Toss the Parmesan with the garlic powder, smoked paprika, Italian seasoning and black pepper.
  3. Peel the onion and slice it into 1/4-inch (6 mm) rounds. Pat dry with paper towels.
  4. Spoon about 1 tablespoon of seasoned Parmesan into mounds 2 inches apart on the baking sheets and pat into circles slightly wider than the onion slices.
  5. Press an onion round or ring onto each mound and sprinkle with about 2 teaspoons more Parmesan.
  6. Bake for 15 to 18 minutes, rotating the pans halfway, until deep golden brown and crisp at the edges.
  7. Cool on the pans for 5 minutes, sprinkle with parsley and serve with dip.

Notes

Yield: Makes about 16 chips, depending on the size of the onion.
Air fryer: Cook on parchment at 375°F (190°C) for 6 to 8 minutes in batches.
Nutrition is an estimate per serving of about 4 chips, without dip.
