Ingredients

Potatoes
  • 3 pounds sweet potatoes peeled, 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
Hot honey butter
  • 3 tablespoons unsalted butter
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes more to taste
  • 1 tablespoon lime juice
  • 1/2 teaspoon fresh thyme leaves
Topping
  • 3/4 cup pecan halves
  • 1 tablespoon maple syrup
  • 1 pinch flaky sea salt

Method

  1. Heat oven to 425F. Toss sweet potatoes with oil, salt, paprika and pepper and spread on two lined pans.
  2. Roast 20 minutes. Meanwhile warm butter, honey, pepper flakes and thyme, then add lime juice.
  3. Flip potatoes, add pecans tossed with maple, and roast 12 to 15 minutes.
  4. Drizzle with half the hot honey butter and roast 5 to 8 minutes more.
  5. Transfer to a platter, drizzle with remaining glaze and finish with flaky salt and thyme.

Notes

Not for infants under one year because of honey. Leftovers reheat best in a hot oven.
