Ingredients

Fillings
  • 8 ounces turkey breakfast sausage bulk, casings removed (225 g)
  • 1/2 cup red bell pepper finely diced
  • 2 cups baby spinach roughly chopped
  • 2 green onions thinly sliced
  • 3/4 cup shredded sharp cheddar cheese (85 g)
Egg mixture
  • 12 large eggs room temperature
  • 1 cup cottage cheese full-fat or 2 percent (225 g)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • cooking spray for the pan

Method

Prepare the fillings
  1. Preheat the oven to 350°F (175°C) and generously grease a 12-cup muffin tin or line it with silicone liners.
  2. Cook the sausage in a skillet over medium heat for 5 to 6 minutes, breaking it into crumbles, until browned. Add the red pepper and cook for 2 minutes, then add the spinach and cook until wilted. Transfer to a plate, blot with paper towels and let cool for 5 minutes. Stir in the green onions.
Mix and bake
  1. Blend the eggs, cottage cheese, salt, pepper, garlic powder and paprika in a blender for 20 to 30 seconds until completely smooth.
  2. Divide the sausage mixture and cheddar evenly among the cups, then pour the egg mixture over the top, filling each cup about three quarters full.
  3. Bake for 20 to 24 minutes until the centers are set and the tops are lightly golden.
Cool
  1. Cool in the pan for 5 minutes, run a thin knife around the edges and lift out. Serve warm.

Notes

Storage: Refrigerate for up to 4 days or freeze for up to 3 months. Reheat in the microwave for 20 to 30 seconds from the refrigerator.
Substitutions: Swap the sausage for bacon or ham, and the cheddar for Gruyere or pepper jack.
