Ingredients

Cookie dough
  • 2 1/4 cups all-purpose flour spooned and leveled (280 g)
  • 2 teaspoons baking soda
  • 1/2 teaspoon fine salt
  • 1 tablespoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup unsalted butter softened (170 g)
  • 1 cup packed dark brown sugar (200 g)
  • 1 large egg room temperature
  • 1/3 cup unsulphured molasses not blackstrap (80 ml)
  • 1 teaspoon pure vanilla extract
For rolling
  • 1/2 cup granulated sugar (100 g)
  • 3/4 cup powdered sugar (90 g)

Method

Make the dough
  1. Whisk the flour, baking soda, salt, ginger, cinnamon, cloves and nutmeg in a medium bowl.
  2. Beat the butter and brown sugar for 2 minutes until light and creamy.
  3. Beat in the egg, then the molasses and vanilla until smooth.
  4. Add the dry ingredients on low speed just until combined.
  5. Cover and refrigerate for at least 1 hour or up to 3 days.
Roll and bake
  1. Heat the oven to 350°F (175°C) and line baking sheets with parchment.
  2. Scoop 1-tablespoon balls. Roll each in granulated sugar, then coat thickly in powdered sugar.
  3. Place 2 inches apart and bake one sheet at a time for 9 to 11 minutes, until cracked on top and just set at the edges.
  4. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

Molasses: Use regular or mild unsulphured molasses. Blackstrap will make the cookies bitter.
Storage: Airtight at room temperature for up to 1 week. Freeze baked cookies or uncoated dough balls for up to 3 months.
