  • 8 ounces aged white cheddar cubed or sliced (225 g)
  • 8 ounces brie small wheel or wedge (225 g)
  • 4 ounces gouda or pepper jack cubed (115 g)
  • 8 ounces fresh mozzarella pearls drained (225 g)
Meats
  • 4 ounces hard salami thinly sliced (115 g)
  • 4 ounces pepperoni sliced (115 g)
  • 3 ounces prosciutto thinly sliced (85 g)
Fruit and extras
  • 1 large bunch fresh rosemary
  • 1 1/2 cups red grapes small clusters
  • 1 1/2 cups green grapes small clusters
  • 1 cup cherry tomatoes
  • 1/2 cup fresh cranberries
  • 1/2 cup pomegranate arils
  • 1/2 cup green olives
  • 1/2 cup cornichons
  • 1/2 cup roasted pecans or almonds
  • 1/3 cup fig jam or pepper jelly for the center bowl
  • 1 box assorted crackers served alongside

Method

Prep
  1. Slice or cube the cheeses, fold the meats and wash and dry the fruit and rosemary.
Build the wreath
  1. Place a small bowl in the center of a large round board. Arrange rosemary sprigs in a ring around it, all angled the same direction.
  2. Space the brie and larger cheese pieces evenly around the ring, then add clusters of cubed cheese and mozzarella pearls.
  3. Fold the salami and pepperoni and ripple the prosciutto between the cheeses. Make a salami rose if desired.
  4. Tuck grapes, tomatoes, cranberries and pomegranate arils into the gaps, alternating red and green.
  5. Fill remaining spaces with olives, cornichons and nuts. Spoon jam into the center bowl, add more rosemary and serve with crackers on the side.
