Method
- Step 1: Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch baking dish. Shred your cooked chicken into bite-sized pieces (rotisserie chicken is perfect because it’s already tender and seasoned).Step 2: In a large bowl, mix softened cream cheese, ranch dressing, and buffalo sauce until completely smooth. If your cream cheese is soft enough, you can do this with a spatula, but a hand mixer makes it extra creamy and fast.Step 3: Stir in shredded chicken, 1 cup cheddar, ½ cup mozzarella, blue cheese crumbles, garlic powder, onion powder, salt, and pepper. Mix until the chicken is evenly coated and the dip looks thick and creamy.Step 4: Spread the mixture into your baking dish. Sprinkle the remaining cheddar and mozzarella on top for that gooey golden crust.Step 5: Bake uncovered for 20–25 minutes until bubbling around the edges and melted on top. For extra browning, broil for 2–3 minutes at the end (watch closely). Let it rest 5 minutes, garnish with green onions, and serve warm with chips, crackers, celery, and carrots.
