Ingredients

Wet ingredients
  • 3 medium ripe bananas mashed, about 1 1/3 cups (340 g)
  • 2 large eggs room temperature
  • 3/4 cup plain Greek yogurt 2 percent or whole milk (180 g)
  • 1/3 cup maple syrup or honey (80 ml)
  • 3 tablespoons coconut oil or unsalted butter melted and slightly cooled
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 1/4 cups white whole wheat flour or all-purpose flour, spooned and leveled (150 g)
  • 1/2 cup vanilla protein powder whey or whey and casein blend, about 2 scoops (60 g)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Optional
  • 1/2 cup mini chocolate chips or chopped walnuts

Method

  1. Heat the oven to 350°F (175°C). Line a 12-cup muffin tin with liners and lightly spray them with oil.
  2. Mash the bananas in a large bowl. Whisk in the eggs, Greek yogurt, maple syrup, melted coconut oil and vanilla until smooth.
  3. Add the flour, protein powder, baking soda, baking powder, cinnamon and salt. Fold just until no dry streaks remain, then fold in any mix-ins.
  4. Let the batter rest for 5 minutes, then divide it evenly among the muffin cups.
  5. Bake for 18 to 22 minutes, until the tops spring back and a toothpick in the center comes out with a few moist crumbs.
  6. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Protein powder: Whey or whey and casein blends give the softest muffins. For plant protein, add 2 to 3 tablespoons milk.
Storage: Refrigerate up to 4 days or freeze up to 3 months. Microwave 30 to 45 seconds to reheat.
Nutrition is an estimate per muffin without optional mix-ins, and varies with the protein powder and yogurt you use.
