Ingredients

Dry ingredients
  • 2 cups all-purpose flour (250 g)
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
Mix-ins
  • 6 tablespoons cold unsalted butter cubed or grated (85 g)
  • 1 cup sharp cheddar shredded (100 g)
  • 6 slices cooked bacon crisp and crumbled
  • 2 tablespoons fresh chives chopped
Wet ingredients
  • 3/4 cup cold heavy cream plus 1 tablespoon for brushing (180 ml)
  • 1 large egg

Method

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Whisk the flour, baking powder, sugar, salt and pepper in a large bowl.
  3. Work in the cold butter until the mixture looks like coarse crumbs with some pea-size bits.
  4. Stir in the cheddar, bacon and chives.
  5. Whisk the cream and egg, add to the bowl and stir with a fork until a shaggy dough forms.
  6. Pat the dough into a 7 to 8-inch round, 1 inch thick, and cut into 8 wedges. Place on the baking sheet and brush with cream.
  7. Bake 18 to 22 minutes until golden. Cool 5 minutes and serve warm.
