Ingredients

Cinnamon sugar swirl
  • 1/3 cup light brown sugar packed (65 g)
  • 1 teaspoon ground cinnamon
Apples
  • 2 medium apples peeled and diced 1/2 inch, about 2 cups (250 g)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
Batter
  • 1/2 cup unsalted butter softened (113 g)
  • 2/3 cup granulated sugar (135 g)
  • 2 large eggs room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour spooned and leveled, divided (190 g)
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk room temperature (120 ml)
Glaze
  • 1 cup powdered sugar (120 g)
  • 2-3 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Method

  1. Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with a parchment sling.
  2. Mix the brown sugar and 1 teaspoon cinnamon for the swirl. In another bowl, toss the diced apples with 2 tablespoons sugar, 1 teaspoon cinnamon and 1 tablespoon of the flour.
  3. Beat the softened butter and 2/3 cup sugar until creamy, about 2 minutes. Whisk in the eggs one at a time, then the vanilla.
  4. Whisk the remaining flour, baking powder and salt. Stir into the butter mixture in two additions, alternating with the milk, just until combined.
  5. Spread half the batter in the pan, top with half the apples and half the cinnamon sugar. Add the remaining batter, then the remaining apples and cinnamon sugar. Swirl gently with a knife.
  6. Bake for 50 to 60 minutes, until golden and a toothpick in the center comes out with moist crumbs. Tent with foil after 35 minutes if browning quickly.
  7. Cool in the pan 15 minutes, then lift out. Whisk the powdered sugar, milk and vanilla into a thick glaze and pour over the warm loaf. Let set 30 minutes before slicing.

Notes

Apples: A mix of Honeycrisp and Granny Smith gives the best flavor and texture.
