Ingredients

Filling
  • 10 ounces frozen chopped spinach thawed and squeezed very dry (285 g)
  • 4 ounces cream cheese softened (115 g)
  • 1/2 cup crumbled feta cheese (70 g)
  • 1/2 cup finely grated parmesan cheese (45 g)
  • 1 clove garlic minced
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
Pastry
  • 1 package frozen puff pastry 17.3 ounces, 2 sheets, thawed (490 g)
  • 1 large egg beaten with 1 tablespoon water
  • all-purpose flour for rolling

Method

  1. Mix the cream cheese, spinach, feta, parmesan, garlic, lemon zest, red pepper flakes and black pepper in a bowl until combined.
  2. On a lightly floured surface, roll one pastry sheet into a 10 by 12-inch rectangle.
  3. Spread half the filling over the pastry, leaving a 1/2-inch border on one long edge.
  4. Roll up tightly from the opposite long edge, brush the border with egg wash and press to seal. Repeat with the second sheet.
  5. Wrap the logs and refrigerate for 30 minutes until firm.
  6. Heat the oven to 400°F (200°C) and line two baking sheets with parchment.
  7. Trim the ends and slice each log into about 18 rounds, 1/2 inch thick. Arrange 2 inches apart and brush with egg wash.
  8. Bake for 18 to 22 minutes, until puffed and deep golden. Cool on the pan for 5 minutes before serving.
