Filling
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
- Beat the cream cheese, powdered sugar, egg yolk, flour and vanilla until completely smooth and set aside.
Batter and baking
- Whisk the pumpkin, granulated sugar, brown sugar, eggs and oil in a large bowl.
- In a second bowl, whisk the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg and cloves. Fold into the wet mixture until just combined.
- Spread half the batter in the pan, dollop the filling over the center leaving a 1/2-inch border, then cover with the remaining batter.
- Bake for 60 to 70 minutes, tenting with foil after 40 minutes, until a toothpick in the pumpkin part comes out clean.
- Cool in the pan for 20 minutes, lift out and cool completely on a rack before slicing. Refrigerate leftovers.
Notes
Storage: Refrigerate in an airtight container for up to 5 days because of the cream cheese filling.
