Ingredients

Chicken and glaze
  • 1 1/2 pounds boneless skinless chicken breasts sliced into strips
  • 1/3 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons mayonnaise
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
Crust
  • 3 cups salted hard pretzels about 6 ounces
  • 1/2 cup panko breadcrumbs
  • cooking spray for the rack

Method

  1. Heat the oven to 425F (220C) and set a sprayed wire rack on a baking sheet.
  2. Pat the chicken dry and season with pepper and garlic powder.
  3. Whisk mustard, honey, mayonnaise and paprika. Reserve 1/4 cup for dipping.
  4. Crush the pretzels to pea-size pieces and mix with panko.
  5. Coat the chicken in the glaze, then press into the crumbs on both sides.
  6. Arrange on the rack and bake 18 to 22 minutes, flipping once, until 165F (74C) inside.
  7. Rest 5 minutes and serve with the reserved sauce.

Notes

Use hard salted pretzels for the best crunch. Leftovers reheat best in an oven or air fryer.
