Ingredients
Method
Sear the beef
- Pat the beef dry and season with salt and pepper.
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Sear half the beef in a single layer for 1 to 2 minutes per side until browned. Transfer to a plate and repeat with the remaining oil and beef.
Make the sauce
- Reduce the heat to medium, add 2 tablespoons butter and the mushrooms. Cook for 6 to 7 minutes until golden.
- Add the onion and cook for 4 minutes, then add the garlic and cook for 30 seconds.
- Sprinkle in the flour and stir for 1 minute. Whisk in the broth, Worcestershire and Dijon, scraping up the browned bits, and simmer for 4 to 5 minutes until thickened.
- Meanwhile, cook the egg noodles according to the package, drain and toss with 1 tablespoon butter.
Finish
- Reduce the heat to low. Stir a few spoonfuls of hot sauce into the sour cream, then stir the mixture into the skillet.
- Return the beef and its juices to the pan and warm gently for 1 to 2 minutes without boiling. Season to taste, garnish with parsley and serve over the noodles.
