Crust
- Heat the oven to 325°F (165°C). Line a 9x13-inch pan with parchment, leaving an overhang on two sides.
- Process the cookies to fine crumbs, mix with the melted butter, press firmly into the pan and bake for 8 minutes. Cool slightly.
Filling
- Beat the cream cheese and sugar on medium-low speed for 2 minutes until smooth.
- Mix in the sour cream, vanilla, peppermint extract and flour, then add the eggs one at a time, mixing only until combined.
- Pour over the crust, tap out air bubbles and bake for 32 to 38 minutes, until the edges are set and the center jiggles slightly.
- Cool for 1 hour at room temperature, then refrigerate at least 4 hours or overnight.
Topping
- Heat the cream until steaming, pour over the chocolate chips, wait 2 minutes and stir until smooth.
- Spread the ganache over the chilled cheesecake, chill 15 minutes, then sprinkle with candy canes. Lift out, cut with a warm knife into 16 bars.
